Ingredients

  • 2 cups pumpkin puree (unsweetened)
  • 1 pound ground beef or turkey
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 1 cup frozen or fresh green beans, chopped
  • 3 cloves garlic cloves, minced
  • 1.5 cups cheddar cheese, shredded
  • 2 large eggs, beaten
  • 0.5 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium potatoes, peeled and sliced thinly
  • 0.5 cup breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set it aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Step 3

Add the ground beef (or turkey) to the skillet. Cook, breaking it apart with a spoon, until fully browned and cooked through. Drain any excess fat.

Step 4

Stir in the minced garlic, carrots, green beans, paprika, thyme, salt, and pepper. Cook for an additional 3 minutes to combine flavors. Remove from heat.

Step 5

In a large bowl, whisk together the pumpkin puree, beaten eggs, milk, and 1 cup of the shredded cheddar cheese.

Step 6

Layer the sliced potatoes evenly on the bottom of the prepared casserole dish. Spread the cooked meat and vegetable mixture over the potatoes.

Step 7

Pour the pumpkin and cheese mixture evenly over the meat and vegetables, ensuring it's distributed well.

Step 8

Sprinkle the remaining 0.5 cup of cheddar cheese over the top, then sprinkle the breadcrumbs evenly as the final topping.

Step 9

Cover the casserole loosely with aluminum foil and bake in the preheated oven for 30 minutes.

Step 10

After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Step 11

Let the casserole cool for 5-10 minutes before serving. Enjoy your hearty Pumpkin Farmer's Casserole!
