Ingredients

  • 2 cups All-purpose flour
  • 0.5 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 2 teaspoons Pumpkin pie spice
  • 0.5 teaspoons Salt
  • 0.75 cups Canned pumpkin puree
  • 0.25 cups Whole milk
  • 1 large Egg
  • 3 tablespoons Unsalted butter (melted and slightly cooled)
  • 4 cups Vegetable oil (for frying)
  • 0.5 cups Cinnamon sugar (for coating)

Directions

Step 1

In a large mixing bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt.

Step 2

In another bowl, combine the pumpkin puree, milk, egg, and melted butter. Whisk until smooth and well blended.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing; the batter should be thick and slightly sticky.

Step 4

Heat the vegetable oil in a deep, heavy-bottomed pot or Dutch oven over medium heat until it reaches 350°F (175°C). Use a thermometer to maintain a consistent temperature.

Step 5

Using a small cookie scoop or two spoons, carefully drop tablespoon-sized portions of batter into the hot oil. Fry in small batches to avoid overcrowding.

Step 6

Fry the doughnut drops for 2–3 minutes, turning occasionally, until golden brown and puffed. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Step 7

While still warm, roll the doughnut drops in cinnamon sugar until evenly coated.

Step 8

Serve warm and enjoy! These are best eaten fresh but can be stored in an airtight container for up to 2 days.
