Ingredients

  • 2.25 teaspoons Active dry yeast
  • 0.5 cups Warm milk (110°F or 43°C)
  • 2 tablespoons Granulated sugar
  • 0.75 cups Pumpkin puree (not pumpkin pie filling)
  • 4 tablespoons Unsalted butter, melted
  • 1 large Egg
  • 3.25 cups All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Additional melted butter (for brushing)

Directions

Step 1

In a small bowl, combine the warm milk, yeast, and 1 tablespoon of the sugar. Stir gently and let sit for 5-10 minutes until the mixture is frothy.

Step 2

In a large mixing bowl, whisk together the pumpkin puree, melted butter, remaining sugar, and the egg until smooth.

Step 3

Add the yeast mixture to the pumpkin mixture and stir until well combined.

Step 4

Gradually add in the flour and salt, mixing with a wooden spoon or using the dough hook attachment of a stand mixer. Continue kneading (by hand or in the mixer) for about 7-10 minutes until the dough is soft and elastic. If the dough is too sticky, add a little extra flour, 1 tablespoon at a time.

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.

Punch down the dough and divide it into 12 equal portions. Roll each portion into a ball and arrange them on a greased or parchment-lined baking sheet, leaving a bit of space between each roll.

Cover the rolls with the kitchen towel and let them rise again for 30-40 minutes, until puffy.

Preheat your oven to 375°F (190°C).
