  • 1 tablespoon Fresh ginger (minced)
  • 2 teaspoons Curry powder
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoons Chili flakes (optional)
  • 2 tablespoons Olive oil or coconut oil
  • 0.25 cup Fresh cilantro (for garnish, optional)
  • 1 Lime (cut into wedges)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Set aside to drain.

Step 2

Heat the olive oil or coconut oil in a large pot over medium heat.

Add the chopped onion and sauté for 3-4 minutes, until soft and translucent.

Stir in the minced garlic and ginger, and cook for another minute until fragrant.

Add the curry powder, turmeric, cumin, coriander, and chili flakes (if using) to the pot. Stir well and cook the spices for 1-2 minutes to toast them and enhance their flavors.
