  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 0.5 cup Vegetable oil
  • 2 Eggs
  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 8 ounces Cream cheese, softened
  • 0.33 cup Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the pan.

Step 2

In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth and well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.
