Warm the milk in a small saucepan until it’s about 110°F. Stir in the sugar and sprinkle the yeast over the top. Let it sit for 5-10 minutes until foamy.
In a small bowl, melt 4 tablespoons of butter. Let cool slightly.
In a large mixing bowl, combine the pumpkin puree, egg, melted butter, and yeast mixture. Stir until smooth.
Add 2 cups of flour and the salt to the wet ingredients. Mix until combined, then gradually add the remaining flour 1/2 cup at a time until a soft dough forms.
Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with the dough hook for about 5 minutes.
Transfer the dough to a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
After the dough has risen, punch it down and roll it out on a floured surface into a 10x16-inch rectangle.
Spread the softened butter evenly over the rolled-out dough, leaving a small border around the edges. Sprinkle the brown sugar and cinnamon evenly over the butter.
Starting from the long edge, roll the dough tightly into a log. Cut into 12 equal pieces and place them in a greased 9x13-inch baking dish.
Cover the dish with a towel and let the rolls rise again for 30 minutes, or until puffy.
Preheat your oven to 350°F. Bake the rolls for 20-25 minutes, or until they’re lightly golden on top.
While the rolls are baking, prepare the frosting. Beat the cream cheese and softened butter together until smooth. Mix in the powdered sugar, vanilla, and milk until the frosting is creamy.
Remove the rolls from the oven and let them cool for 10 minutes before spreading the cream cheese frosting generously over the top.
Serve warm and enjoy!
