Ingredients

  • 500 grams Pumpkin (peeled and diced)
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Fresh ginger (grated)
  • 125 milliliters Apple cider vinegar
  • 100 grams Brown sugar
  • 50 grams Raisins
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 100 milliliters Water

Directions

Step 1

Peel and dice the pumpkin into small cubes, approximately 1–2 cm in size.

Step 2

In a large saucepan, heat a small drizzle of oil over medium heat and sauté the chopped onion until softened, about 3–4 minutes.

Step 3

Add the minced garlic and grated ginger to the pan, cooking for an additional 1 minute until fragrant.

Step 4

Stir in the diced pumpkin, ensuring the pieces are well coated with the onion and ginger mixture.

Step 5

Add the apple cider vinegar, brown sugar, raisins, ground cinnamon, ground cumin, cayenne pepper, salt, and water to the saucepan. Stir well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pan. Simmer for 30–35 minutes, stirring occasionally, until the pumpkin is tender and begins to break down.

Using a wooden spoon, gently mash some of the pumpkin cubes to create a thicker consistency, leaving a few pieces intact for texture.

Remove the chutney from heat and allow it to cool slightly before transferring it to sterilized jars.
