Ingredients

  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground ginger
  • 0.5 teaspoons Salt
  • 1 cup Granulated sugar
  • 0.5 cups Brown sugar (packed)
  • 1 cup Pumpkin puree
  • 0.5 cups Vegetable oil (or melted coconut oil)
  • 0.25 cups Milk (or non-dairy milk)
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.75 cups Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, milk, vanilla extract, and egg. Whisk until smooth and well combined.

Step 4

Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon, being careful not to overmix. Mix until just combined.

Step 5

Gently fold in the chocolate chips, reserving a handful to sprinkle on top of the muffins if desired.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. Sprinkle the reserved chocolate chips on top for an extra touch.

Step 7

Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy these Pumpkin Chocolate Chip Muffins with a cup of coffee or tea!
