  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup All-purpose flour
  • 2 Eggs (beaten)
  • 1 cup Breadcrumbs
  • 3 cups Vegetable oil (for frying)
  • 2 tablespoons Chopped cilantro (for garnish)

Directions

Step 1

In a large mixing bowl, combine the pumpkin puree, shredded chicken (if using), black beans, shredded cheddar cheese, diced jalapeño, chili powder, ground cumin, garlic powder, salt, and black pepper. Mix until evenly combined.

Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Repeat the process until all the mixture has been used. You should yield around 12-14 balls.
