Ingredients

  • 1 whole Small sugar pumpkin
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1.5 cups Gruyère cheese
  • 1.5 cups Sharp cheddar cheese
  • 1 tablespoon Cornstarch
  • 1 cup Dry white wine
  • 0.25 teaspoons Ground nutmeg
  • 4 cups Crusty bread, cubed
  • 3 cups Assorted vegetables, sliced (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice off the top of the pumpkin to create a lid, and scoop out the seeds and pulp from inside. Save the lid for aesthetics, if desired.

Step 3

Brush the inside of the pumpkin with 1 tablespoon of olive oil and season with a pinch of salt. Place the pumpkin on a baking sheet and roast for 40-50 minutes, or until the flesh is tender but the pumpkin still holds its shape.

Step 4

While the pumpkin roasts, grate the Gruyère and sharp cheddar cheese. Toss the grated cheese with 1 tablespoon of cornstarch to ensure even melting.

Step 5

In a medium saucepan over medium heat, rub the bottom of the pot with the garlic cloves, then mince the garlic and sauté with the remaining 1 tablespoon of olive oil until fragrant.

Step 6

Add the dry white wine to the saucepan and heat until just simmering. Gradually add the cheese, stirring continuously to prevent lumps, until the mixture is smooth and creamy. Stir in the nutmeg and adjust seasoning with salt and pepper to taste.

Once the pumpkin is roasted, carefully transfer it to a serving dish. Pour the cheese fondue into the roasted pumpkin.

Step 8

Serve immediately with cubed crusty bread and optional sliced vegetables for dipping. The roasted pumpkin flesh can also be scraped and enjoyed as part of the fondue.
