Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Pumpkin puree
  • 0.5 cup Vegetable oil
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh cranberries (or dried cranberries)
  • 0.5 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a separate bowl, combine the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth and well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

Step 5

Fold in the cranberries and walnuts (if using) until evenly distributed in the batter.

Step 6

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Slice and serve. This bread can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
