  • 0.5 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Nutmeg
  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

In a large bowl, combine the bran cereal and boiling water. Stir to moisten and let it sit for 5 minutes to soften.

After the bran cereal has softened, add the pumpkin puree, brown sugar, vegetable oil, egg, and vanilla extract. Mix well until fully combined.
