  • 0.75 cup Pumpkin puree
  • 0.5 cup Unsweetened applesauce
  • 1 large Egg
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 medium Apple, peeled and diced
  • 0.5 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir to distribute the ingredients evenly.
