Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 0.25 cups Brown sugar, packed
  • 2 teaspoons Pumpkin pie spice
  • 1 teaspoons Ground cinnamon
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 1 cups Pumpkin puree
  • 0.5 cups Apple butter
  • 0.5 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 0.5 cups Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt until well combined.

Step 3

In a separate medium-sized bowl, whisk together the eggs, pumpkin puree, apple butter, vegetable oil, and vanilla extract until smooth and uniform.

Step 4

Pour the wet ingredients into the bowl of dry ingredients and gently fold together until just combined. Be careful not to overmix; the batter should be thick and lumpy.

Step 5

If using, gently fold the chopped nuts into the batter for added texture and flavor.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve the muffins warm or at room temperature. Enjoy them as a breakfast treat or a cozy afternoon snack!
