Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • 0.5 teaspoon Salt
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 2 large Eggs
  • 0.5 cup Unsalted butter, melted and slightly cooled
  • 1 teaspoon Vanilla extract
  • 1 medium Apple, peeled, cored, and chopped (about 1 cup)
  • 0.5 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

Step 3

In a separate medium bowl, whisk together the pumpkin puree, eggs, melted butter, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix the batter.

Step 5

Fold in the chopped apple and nuts (if using) until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared loaf pan and spread it out evenly.

Step 7

Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean or with a few moist crumbs.

Step 8

Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Step 9

Slice and serve plain or with a spread of butter for an extra indulgent treat. Store leftover bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
