  • 0.75 cup Pumpkin puree (unsweetened)
  • 0.5 cup Brown sugar
  • 0.5 cup Unsweetened applesauce
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
  • 1 medium Grated apple (peeled)
  • 0.5 cup Chopped walnuts (optional)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.

Step 2

In a large mixing bowl, combine the wheat bran, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Whisk until well blended.

In a separate medium mixing bowl, whisk the pumpkin puree, brown sugar, applesauce, egg, and vanilla extract until smooth. Then stir in the milk.
