  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 5 cups vegetable stock
  • 1 can coconut milk
  • 2 tbsp olive oil
  • 2 tbsp fresh coriander (cilantro), chopped (optional, for garnish)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes, stirring frequently, until fragrant.
