Ingredients

  • 1000 grams pumpkin
  • 30 grams unsalted butter
  • 1 medium yellow onion

  • 1000 milliliters vegetable stock
  • 250 milliliters heavy cream
  • 100 grams gorgonzola cheese
  • 15 milliliters olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 30 grams pumpkin seeds (optional, for garnish)

Directions

Step 1

Cut the pumpkin into small cubes, discarding the skin and seeds.

Finely chop the onion and garlic.

Step 3

In a large pot, melt the butter over medium heat. Add the olive oil to prevent the butter from burning.

Add the chopped onion and garlic to the pot. Sauté for about 5 minutes until softened and fragrant.
