Ingredients

  • 2 pounds Pork shoulder
  • 1 tablespoon Kosher salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Brown sugar
  • 1 cup Barbecue sauce
  • 1 tablespoon Olive oil
  • 4 Large tortillas
  • 2 cups Coleslaw mix
  • 1 cup Sour cream
  • 2 tablespoons Lime juice
  • 0.5 teaspoon Salt
  • 0.25 cup Fresh cilantro

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

In a small bowl, mix together the kosher salt, black pepper, paprika, garlic powder, onion powder, and brown sugar.

Step 3

Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated.

Step 4

Heat olive oil in a large oven-safe pot over medium-high heat.

Step 5

Sear the pork shoulder on all sides until browned, approximately 4-5 minutes per side.

Step 6

Cover the pot with a lid and transfer it to the preheated oven. Allow the pork to roast for 3 to 4 hours or until it is fall-apart tender.

Step 7

Remove the pork from the oven and use two forks to shred the meat directly in the pot, mixing it with the rendered juices.

Step 8

Stir in the barbecue sauce into the shredded pork, mixing well to combine.

Step 9

In a small bowl, combine sour cream, lime juice, and salt. Stir in the coleslaw mix and fresh cilantro until everything is well coated.

Step 10

Lay each tortilla flat and spoon a generous amount of pulled pork onto the center.

Step 11

Top the pork with a portion of the prepared coleslaw mixture.

Step 12

Roll the wrap tightly by folding in the sides and then rolling from bottom to top.

Step 13

Cut each wrap in half and serve immediately.
