Preheat your oven to 300°F (150°C) or set your slow cooker on low heat.
In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and brown sugar. Mix this dry rub thoroughly.
Pat the pork shoulder dry with paper towels, then rub the olive oil all over. Generously coat the pork with the dry rub, pressing it into all sides of the meat.
