Ingredients

  • 8 pieces Refrigerated biscuit dough
  • 2 cups Cooked pulled pork
  • 0.5 cups Barbecue sauce
  • 1 cups Shredded cheddar cheese
  • 1.5 cups Coleslaw mix
  • 0.25 cups Mayonnaise
  • 1 tablespoons Apple cider vinegar
  • 1 teaspoons Honey
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a standard 12-cup muffin tin with non-stick cooking spray.

Step 2

Flatten each biscuit dough piece with your fingers or a rolling pin until it is about 4-5 inches in diameter. Press each flattened dough piece into the wells of the muffin tin to form a cup shape.

Step 3

In a medium bowl, mix the pulled pork and barbecue sauce until evenly coated.

Step 4

Spoon about 2 tablespoons of the pulled pork mixture into each biscuit cup. Top each with a sprinkle of shredded cheddar cheese.

Step 5

Bake in the preheated oven for 12-15 minutes, or until the biscuit cups are golden brown and the cheese is melted. Remove from the oven and let cool slightly.

Step 6

While the cups are baking, prepare the coleslaw. In a large bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Add the coleslaw mix and toss until evenly coated.

Step 7

Carefully remove the baked biscuit cups from the muffin tin and place them on a serving platter.

Step 8

Top each pulled pork cup with a small scoop of coleslaw. Serve immediately and enjoy!
