Ingredients

  • 1 large Sweet potato

  • 4 large Flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 2 tablespoons Butter
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Salsa (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potato into small 1/2-inch cubes.

Toss the sweet potato cubes with olive oil, ground cumin, chili powder, and garlic powder. Spread them evenly on a baking sheet.
