Ingredients

  • 2 sheets Frozen puff pastry
  • 500 grams Fresh strawberries
  • 6 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 180 milliliters Heavy cream
  • 3 large Egg whites
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 200°C (400°F) and line two baking trays with parchment paper.

Step 2

Thaw the frozen puff pastry sheets for 10 minutes, then cut each sheet into 6 equal squares.

Step 3

Place the squares on the prepared baking trays, leaving a small gap between each piece. Bake for 15-20 minutes or until golden brown and puffed up. Remove from the oven and let cool completely.

Step 4

While the pastry is baking, hull and slice the strawberries. Toss them in a bowl with 3 tablespoons of granulated sugar and the vanilla extract. Let them macerate for at least 15 minutes.

Step 5

In a mixing bowl, whisk the heavy cream with the powdered sugar until it forms soft peaks. Cover and refrigerate until ready to use.

Step 6

In a clean, dry bowl, beat the egg whites with the lemon juice and salt until foamy. Gradually add the remaining 3 tablespoons of granulated sugar and continue beating until stiff, glossy peaks form, about 5-7 minutes.

Step 7

Preheat your oven's broiler. Assemble the shortcakes by slicing the puff pastry squares in half horizontally. Place the bottom halves on a baking tray.

Step 8

Top each bottom half with a spoonful of the macerated strawberries and a dollop of whipped cream.

Step 9

Add the top halves of the puff pastry, then spread a layer of meringue over the top of each shortcake.

Step 10

Broil for 1-2 minutes, keeping a close eye to prevent burning, until the meringue is lightly golden.

Step 11

Serve immediately and enjoy your Puffy Strawberry Shortcakes with Meringue!
