Ingredients

  • 3 tablespoons All-purpose flour
  • 0.5 cup Milk (whole or 2%)
  • 2 large Eggs
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Powdered sugar
  • 2 whole Lemon wedges

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a medium oven-safe skillet (cast iron recommended) in the oven as it heats.

Step 2

In a medium mixing bowl, whisk together the flour, milk, eggs, sugar, vanilla extract, and salt until smooth. The batter will be thin.

Step 3

Once the oven has reached temperature, carefully remove the skillet and add the unsalted butter. Swirl the butter around the skillet until it is fully melted and coats the bottom and sides of the pan.

Step 4

Pour the batter into the hot skillet and immediately return it to the oven. Bake for 18-20 minutes, or until the pancake is puffed and golden brown around the edges.

Step 5

Once baked, remove the skillet from the oven. The pancake will deflate slightly as it cools—this is normal.

Step 6

Dust the pancake generously with powdered sugar, squeeze fresh lemon juice over the top, and serve immediately. Optionally, add toppings like fruit, syrup, or whipped cream as desired.
