Ingredients

  • 3 Large eggs
  • 0.75 cup Whole milk
  • 0.75 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 3 tablespoons Unsalted butter
  • 2 medium Apples (peeled, cored, and thinly sliced)
  • 2 tablespoons Brown sugar (light or dark)
  • 0 to taste Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-inch oven-safe skillet (such as cast iron) in the oven to heat up while you prepare the batter.

Step 2

In a blender, combine the eggs, milk, flour, granulated sugar, vanilla extract, cinnamon, and salt. Blend until smooth and no lumps remain. Let the batter rest for a few minutes while you prepare the apples.

Step 3

Carefully remove the hot skillet from the oven. Add the butter and swirl it around until melted and it coats the bottom and sides of the skillet.

Step 4

Add the apple slices to the skillet and sprinkle the brown sugar over them. Return the skillet to the oven for about 3 minutes, just until the apples begin to soften and caramelize slightly.

Step 5

Remove the skillet from the oven and immediately pour the batter over the apples. Do not stir.

Step 6

Return the skillet to the oven and bake for 18-20 minutes, or until the pancake is puffed and golden brown at the edges.

Step 7

Carefully remove the skillet from the oven and let the pancake rest for a minute. It will deflate slightly as it cools.

Step 8

Dust the pancake with powdered sugar, if desired, before slicing and serving warm. Enjoy your delicious puffy baked apple pancake!
