Ingredients

  • 1 sheet Puff pastry sheet
  • 100 grams Roquefort cheese
  • 50 grams Walnuts
  • 2 tablespoons Honey
  • 1 teaspoon Fresh thyme leaves
  • 1 large Egg
  • 1 teaspoon Water
  • 1 tablespoon All-purpose flour
  • 1 pinch Salt
  • 1 pinch Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

Lightly flour your work surface and roll out the puff pastry sheet if necessary to ensure it is even. Cut the pastry into 4 equal rectangles.

Step 3

Using a knife, lightly score a border about 1 cm (1/2 inch) from the edge of each rectangle. Be careful not to cut all the way through. This will help the edges puff up during baking.

Step 4

In a small bowl, whisk the egg with 1 teaspoon of water to create an egg wash. Brush the borders of each rectangle with the egg wash.

Step 5

Crumble the Roquefort cheese and evenly distribute it within the scored area of the puff pastry rectangles.

Step 6

Chop the walnuts into small pieces and sprinkle them over the cheese.

Step 7

Drizzle 1/2 tablespoon of honey over each tart and scatter a few fresh thyme leaves on top.

Step 8

Season lightly with a pinch of salt and black pepper for added flavor.

Step 9

Transfer the tarts to the prepared baking sheet and bake in the preheated oven for 18-20 minutes, or until the pastry is golden and puffed.

Step 10

Remove the tarts from the oven and allow them to cool slightly before serving. Serve warm or at room temperature for the best flavor.
