Ingredients

  • 2 cups Long-grain white rice
  • 3 cups Water
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 2 cups Pink beans (canned, drained and rinsed)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (diced)
  • 1 medium Green bell pepper (diced)
  • 3 cloves Garlic cloves (minced)
  • 1 cup Sofrito (store-bought or homemade)
  • 8 ounces Tomato sauce
  • 1 cup Water
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground oregano
  • 1 leaf Bay leaf
  • 1 teaspoon Adobo seasoning
  • 2 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a medium pot, bring 3 cups of water to a boil. Add 2 tablespoons of vegetable oil, 1 teaspoon of salt, and the rinsed rice. Stir once, reduce heat to low, cover, and let cook for 18-20 minutes. Remove from heat and fluff with a fork before serving.

Step 3

In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, green bell pepper, and minced garlic. Cook for 3-5 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Stir in the sofrito and cook for an additional 2 minutes to bring out its flavors.

Add the tomato sauce, 1 cup of water, ground cumin, ground oregano, bay leaf, and adobo seasoning. Stir to combine and bring to a gentle simmer.

Remove the bay leaf and stir in the chopped fresh cilantro just before serving.
