  • 2 teaspoons adobo seasoning
  • 1 piece bay leaf
  • 2 15-ounce cans red kidney beans, drained and rinsed
  • 2 cups chicken or vegetable broth
  • 1.5 cups white rice
  • 3 cups water
  • 1 teaspoon salt
  • 2 tablespoons cilantro, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and green bell pepper to the pan, and sauté for 3-4 minutes, until softened.

Stir in the minced garlic and cook for an additional minute, until fragrant.
