Ingredients

  • 6 pieces bone-in chicken thighs (skin-on or skinless)
  • 2 tablespoons white vinegar
  • 1 tablespoon adobo seasoning
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 piece medium onion, diced
  • 1 piece bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 8 ounces tomato sauce
  • 2 cups water
  • 1 cup sofrito
  • 0.25 cup pimento-stuffed green olives
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 3 pieces potatoes, peeled and quartered
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Rinse the chicken thighs under cold water. In a large bowl, combine the chicken with white vinegar, adobo seasoning, and black pepper. Mix well to coat. Let the chicken marinate for at least 15 minutes while you prep the other ingredients.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken thighs to the pot, skin-side down if using skin-on chicken. Sear the chicken for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion and bell pepper. Sauté for 3 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the sofrito, tomato sauce, water, oregano, cumin, and olives to the pot. Stir everything together and bring the mixture to a gentle simmer.

Step 5

Return the chicken thighs to the pot, nestling them into the sauce. Add the potatoes, making sure they are submerged in the liquid.

Step 6

Cover the pot, reduce the heat to low, and let the chicken simmer gently for 40-45 minutes, or until the chicken is cooked through and tender, and the potatoes are fork-tender.

Step 7

Taste the sauce and adjust the seasoning with salt or additional adobo seasoning if needed.

Step 8

Serve the Puerto Rican chicken hot, garnished with freshly chopped cilantro if desired. Pair it with white rice or fried plantains (tostones) for a complete meal.
