Ingredients

  • 4 pieces steaks (sirloin or ribeye)
  • 3 tablespoons black peppercorns, coarsely crushed
  • 150 grams Stilton cheese, crumbled
  • 2 pieces large white onions, sliced into thick rings
  • 800 grams potatoes, peeled and cut into thick chips
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 500 milliliters vegetable oil, for frying
  • 2 pieces garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat vegetable oil in a deep frying pan or fryer to 180°C (350°F) for the chips.

Step 3

Rinse the cut potatoes under cold water and pat them dry with a clean kitchen towel. Carefully add the potatoes to the hot oil in batches and fry for 5-7 minutes until pale but partially cooked. Remove and place on a paper towel-lined tray to drain.

Step 4

Rub each steak with olive oil and generously press the crushed black peppercorns into both sides. Set the steaks aside at room temperature.

Step 5

In a skillet over medium-high heat, melt 1 tablespoon of butter and add the onion rings. Sauté for 5-7 minutes, allowing them to char slightly at the edges. Add the minced garlic for the last minute, stirring to combine. Remove from heat and set aside.

Step 6

Reheat the frying oil to 190°C (375°F). Return the chips to the oil and fry for another 3-5 minutes until golden and crispy. Drain on paper towels and sprinkle with salt.

Step 7

Heat a large heavy-bottomed skillet or grill pan over high heat. Add the remaining butter and swirl to coat the pan. Cook the steaks for 2-4 minutes on each side, depending on your preferred level of doneness (e.g., 2-3 minutes per side for medium-rare).

Step 8

During the final minute of cooking, top each steak with crumbled Stilton cheese and cover with a lid or foil to allow the cheese to melt slightly.

Step 9

Remove the steaks from the pan and let them rest for 5 minutes.

Step 10

Serve each steak with a portion of charred onions and crispy chips on the side. Garnish with fresh parsley, if desired.
