Ingredients

  • 4 large Russet potatoes
  • 4 cups Vegetable oil
  • 2 tablespoons Cornstarch
  • 1 cup Water
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 0.5 cup Shredded Parmesan cheese (optional)
  • 2 tablespoons Chopped parsley (optional)

Directions

Step 1

Wash and peel the Russet potatoes. Cut them into 1/4-inch thick strips for a classic pub fry shape.

Step 2

Soak the potato strips in cold water for 30 minutes to remove excess starch and achieve crispier fries. Drain the water, then pat the potatoes completely dry with a clean kitchen towel.

Step 3

In a small bowl, whisk cornstarch with water to form a thin slurry. Toss the dried potato strips in the slurry until evenly coated.

Step 4

Heat the vegetable oil in a deep fryer or a heavy-bottomed pot to 325°F (163°C). Use a thermometer to ensure the oil is at the right temperature.

Step 5

Fry the potatoes in batches to avoid overcrowding. Cook each batch for 3–4 minutes or until they are pale and partially cooked. Remove them from the oil and let them drain on a paper towel-lined plate.

Step 6

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2–3 minutes or until they are crispy and golden brown.

Step 7

Drain the fries on fresh paper towels and immediately sprinkle them with kosher salt, black pepper, garlic powder, and smoked paprika while they are still hot.
