Ingredients

  • 500 grams fresh kale
  • 4 medium potatoes
  • 2 links smoked sausage
  • 1 medium onion
  • 2 garlic cloves
  • 500 milliliters chicken or vegetable broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon white vinegar

Directions

Step 1

Wash the kale thoroughly in cold water. Remove the tough stems and roughly chop the leaves. Set them aside.

Step 2

Peel the potatoes and cut them into small cubes. Set aside.

Step 3

Slice the smoked sausages into rounds. Finely dice the onion and mince the garlic cloves.

Step 4

Heat the olive oil and butter in a large pot over medium heat. Add the diced onions and cook until translucent, about 5 minutes.

Step 5

Add the minced garlic and cook for another minute until fragrant.

Step 6

Stir in the chopped kale and sauté for 5 minutes until it starts to wilt.

Step 7

Add the diced potatoes, smoked sausage slices, chicken or vegetable broth, nutmeg, salt, and black pepper. Stir to combine.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 35-40 minutes, or until the potatoes are tender and the flavors have melded together.

Step 9

Taste and adjust seasoning if necessary. Stir in the white vinegar just before serving for a touch of brightness.

Step 10

Serve warm alongside crusty bread or as a standalone meal. Enjoy!
