Ingredients

  • 4 pieces large eggs
  • 2 tablespoons whole milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon unsalted butter
  • 4 slices provolone cheese
  • 4 pieces sandwich bread (or rolls)
  • 2 tablespoons mayonnaise
  • 0.5 cups baby spinach (optional)

Directions

Step 1

Crack the eggs into a medium bowl. Add the milk, salt, and black pepper. Whisk until the mixture is well combined and slightly frothy.

Step 2

Heat a non-stick skillet over medium-low heat. Add the butter and allow it to melt, coating the bottom of the skillet evenly.

Step 3

Pour the egg mixture into the skillet. Using a spatula, gently stir and fold the eggs continuously, forming soft curds. Cook for about 3-4 minutes or until the eggs are just set but still creamy. Remove from heat.

Step 4

Toast the sandwich bread or rolls until lightly golden. Spread a thin layer of mayonnaise on one side of each piece of bread.

Step 5

Place one slice of provolone cheese on the bottom piece of toasted bread for each sandwich. Spoon half of the scrambled eggs over the cheese, then add an optional layer of baby spinach if desired.

Step 6

Top the eggs with another slice of provolone cheese. Close the sandwich with the other piece of toasted bread, mayonnaise side facing down.

Step 7

For a warm and melty sandwich, return each assembled sandwich to a skillet over low heat and cook for 1-2 minutes on each side, pressing gently with a spatula, until the cheese has melted.

Step 8

Remove from heat, slice the sandwiches in half if desired, and serve immediately.
