Ingredients

  • 250 grams provolone cheese
  • 1 teaspoon oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley (chopped)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Preheat your grill or oven to medium-high heat (~200°C/400°F). If you are using an oven, set it to broil.

Step 2

Cut the provolone cheese into a round disk if it’s not already shaped that way. The disk should be about 2 cm (3/4 inch) thick to ensure even melting.

Step 3

Lightly oil a cast-iron skillet or a small grill-safe baking dish with half the olive oil to prevent the cheese from sticking.

Step 4

Place the provolone cheese in the skillet or baking dish. Drizzle the remaining olive oil over the top of the cheese.

Step 5

Sprinkle the oregano and crushed red pepper flakes evenly over the cheese. Adjust the amount of seasoning to taste.

Step 6

Place the skillet or dish on the preheated grill or under the broiler in the oven. Cook for about 5-7 minutes, or until the cheese is bubbling and lightly golden on the edges. Watch it closely to prevent burning.

Step 7

Carefully remove the skillet or dish from the heat. Sprinkle the chopped parsley over the hot, melted provolone for a fresh finish.

Step 8

Serve immediately with slices of crusty bread for dipping. Enjoy this indulgent, cheesy delight while it’s still hot and gooey!
