Ingredients

  • 4 pieces (about 6 ounces each) salmon fillets
  • 3 tablespoons olive oil
  • 3 cloves, minced garlic
  • 2 cups, halved cherry tomatoes
  • 0.5 cup dry white wine
  • 0.5 cup, chopped fresh basil leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (adjust to taste) black pepper
  • 2 tablespoons, rinsed capers
  • 2 tablespoons butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.

Step 3

Season the salmon fillets on both sides with half of the salt and pepper.

Step 4

Sear the salmon in the skillet for about 2 minutes per side until golden brown but not cooked through. Remove the salmon and set aside.

In the same skillet, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.

Add the halved cherry tomatoes and cook for 3–4 minutes until they begin to soften.
