Ingredients

  • 500 grams Mixed olives (green and black, preferably unpitted)
  • 125 milliliters Extra virgin olive oil
  • 3 units Garlic cloves, thinly sliced
  • 2 units Fresh rosemary sprigs
  • 3 units Fresh thyme sprigs
  • 2 units Bay leaves
  • 0.5 teaspoons Dried chili flakes
  • 1 tablespoon Orange zest (from 1 orange)
  • 1 tablespoon Lemon zest (from 1 lemon)
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Sea salt

Directions

Step 1

Rinse the olives under cold water and pat them dry with a clean kitchen towel. Set them aside in a large mixing bowl.

Step 2

In a small saucepan, heat the olive oil over low heat until warm but not smoking.

Step 3

Add the sliced garlic, rosemary sprigs, thyme sprigs, bay leaves, and dried chili flakes to the warm olive oil. Stir occasionally and let the ingredients infuse for about 2-3 minutes. Be careful not to let the garlic brown.

Remove the saucepan from the heat and stir in the orange zest, lemon zest, black peppercorns, and sea salt.
