  • 2 pounds beef tenderloin (trimmed and tied)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 3 cloves garlic cloves (minced)
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons unsalted butter (softened)
  • 0.5 cup dry white wine
  • 0.5 cup beef stock
  • 1 tablespoon Herbes de Provence

Directions

Step 1

Preheat your oven to 425°F (220°C).

Pat the beef tenderloin dry with paper towels and rub it all over with 2 tablespoons of olive oil.

Step 3

In a small bowl, mix the chopped rosemary, thyme, parsley, minced garlic, kosher salt, ground black pepper, and Herbes de Provence. Rub this herb mixture evenly over the surface of the tenderloin.

Heat a large oven-safe skillet over medium-high heat. Add the remaining 1 tablespoon of olive oil and sear the tenderloin for 2-3 minutes on each side until browned.
