  • 2 cups beef broth

  • 2 tablespoons tomato paste
  • 1 tablespoon Herbes de Provence
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck roast into 2-inch cubes and season with salt and pepper on all sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the beef cubes until browned on all sides, working in batches if necessary. Transfer the browned beef to the crock pot.
