Ingredients

  • 1 cup Rolled oats
  • 0.5 cup Protein powder (vanilla or chocolate flavor)
  • 0.5 cup Natural peanut butter (or almond butter)
  • 0.25 cup Honey or maple syrup
  • 2 tablespoons Chia seeds (optional)
  • 0.25 cup Unsweetened shredded coconut (optional)
  • 0.25 cup Dark chocolate chips or cacao nibs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Water or milk (if needed for consistency)

Directions

Step 1

In a large mixing bowl, combine the rolled oats and protein powder. Mix well to evenly distribute the dry ingredients.

Step 2

Add the natural peanut butter, honey (or maple syrup), chia seeds (if using), shredded coconut (if using), dark chocolate chips (or cacao nibs), and vanilla extract to the bowl.

Step 3

Use a spatula to mix the ingredients together. If the mixture seems too dry, add 1-2 tablespoons of water or milk, a little at a time, until it holds together.

Step 4

Once the mixture is well combined and sticky, use a tablespoon or a small cookie scoop to portion out small amounts of the mixture. Roll them between your hands to form bite-sized balls.

Step 5

Place the protein balls on a plate or tray lined with parchment paper.

Step 6

Refrigerate the balls for at least 30 minutes to firm up. Once firm, transfer them to an airtight container for storage.

Step 7

Store the protein snacks in the refrigerator for up to 1 week, or freeze them for longer storage (up to 3 months).
