Ingredients

  • 1 cup rolled oats
  • 0.5 cup peanut butter (or almond butter)
  • 0.25 cup honey (or maple syrup)
  • 0.5 cup protein powder (vanilla or chocolate)
  • 0.25 cup ground flaxseed
  • 2 tablespoons chia seeds
  • 0.25 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon water or almond milk (if needed)

Directions

Step 1

In a large mixing bowl, combine the rolled oats, protein powder, ground flaxseed, and chia seeds. Stir until the dry ingredients are evenly mixed.

Step 2

Add the peanut butter, honey, and vanilla extract to the bowl. Mix thoroughly until the mixture starts to stick together. It may be helpful to use your hands for this step.

Step 3

If the mixture is too dry and crumbly, add 1 tablespoon of water or almond milk at a time until a dough-like consistency forms.

Step 4

Fold in the mini chocolate chips, if using, until evenly distributed.

Step 5

Using a tablespoon or small cookie scoop, portion the mixture and roll it into 1-inch balls with your hands.

Step 6

Place the balls on a parchment-lined baking sheet or plate and refrigerate for at least 20 minutes to help them firm up.

Step 7
