  • 0.5 cup almond flour

  • 0.5 teaspoon cinnamon
  • 0.75 cup unsweetened almond milk
  • 1 large egg
  • 0.25 cup unsweetened applesauce
  • 2 tablespoons honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 0.25 cup chopped nuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin tin with 8 liners or lightly grease with nonstick spray.

Step 2

In a blender or food processor, grind the rolled oats into a fine flour-like consistency. Transfer the oat flour to a large mixing bowl.

Step 3

Add the protein powder, almond flour, baking powder, and cinnamon to the bowl, and whisk together until combined.

In a separate bowl, whisk together the almond milk, egg, applesauce, honey, and vanilla extract until smooth.
