Ingredients

  • 3 cups rolled oats
  • 1 cup almonds
  • 0.5 cup pumpkin seeds
  • 0.5 cup sunflower seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds
  • 0.5 cup protein powder (vanilla or unflavored)
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.25 cup coconut oil
  • 0.5 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup dried cranberries

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, protein powder, cinnamon, and salt.

Step 3

In a small saucepan, melt the coconut oil over low heat. Once melted, add the honey (or maple syrup) and vanilla extract. Stir to combine and then remove from heat.

Step 4

Pour the wet mixture over the dry ingredients. Stir until all the dry ingredients are evenly coated with the wet mixture.

Spread the granola mixture evenly onto the prepared baking sheet, making sure it's in a thin layer for even cooking.

Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even toasting.
