  • 2 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 6 cups beef broth
  • 14.5 ounces diced tomatoes (canned)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 medium potatoes, diced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into 1-inch cubes. Season the beef with salt and pepper.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the beef in batches and sear on all sides until browned, about 2-3 minutes per side. Remove the beef and set aside.

Step 3

Lower the heat to medium and add the diced onion to the pot. Sauté for 5-6 minutes until softened. Add the minced garlic and sauté for an additional minute until fragrant.

Step 4

Pour in the beef broth and scrape up any browned bits from the bottom of the pot for extra flavor. Stir in the canned diced tomatoes with their juice, bay leaf, and dried thyme.

Return the seared beef to the pot, along with its juices. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 1 hour to allow the beef to tenderize.

After 1 hour, stir in the potatoes, carrots, and celery. Cover and simmer for another 45 minutes, or until the vegetables are tender.

Step 7

During the last 5 minutes of cooking, add the frozen peas and stir well to combine.

Taste the stew and adjust the seasoning with additional salt and pepper as needed. Remove and discard the bay leaf.

Step 9

Ladle the stew into bowls and garnish with chopped parsley if desired. Serve hot with crusty bread or biscuits for a complete meal.
