Ingredients

  • 3 whole heads Belgian endive
  • 12 slices Prosciutto
  • 6 whole Fresh figs
  • 1/2 cup Balsamic vinegar
  • 1 tablespoon Honey
  • 2 teaspoons Olive oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Cut the Belgian endive heads into quarter-length wedges, removing the core to ensure the leaves stay intact.

Step 2

Wrap each endive wedge with a slice of prosciutto and set aside on a platter.

Step 3

In a small saucepan over medium heat, combine the figs (halved), balsamic vinegar, and honey.

Step 4

Stir and simmer the mixture for about 10-12 minutes until the figs have softened and the mixture thickens to a syrupy reduction.

Step 5

Use an immersion blender or mash the figs with a spoon to create a smoother texture, then strain through a fine-mesh sieve into a bowl to remove any solids. Set aside to cool slightly.

Step 6

Heat a large skillet over medium heat and add 2 teaspoons of olive oil.

Step 7

Carefully place the prosciutto-wrapped endives in the skillet, seam side down, and cook for 1-2 minutes on each side until golden and slightly crisp.

Step 8

Remove the endives from the skillet and place them on a serving dish.

Step 9

Drizzle the balsamic fig reduction evenly over the wrapped endives.

Step 10

Sprinkle with a pinch of salt, black pepper, and fresh thyme leaves if using. Serve warm or at room temperature.
