Ingredients

  • 12 ounces Pasta (spaghetti, linguine, or your favorite variety)
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 4 ounces Prosciutto (thinly sliced, then roughly chopped)
  • 3 cloves Garlic (minced)
  • 2 cups Cherry tomatoes (halved)
  • 0.5 teaspoons Crushed red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 0.25 cups Fresh basil leaves (chopped)
  • 0.5 cups Grated Parmesan cheese
  • 0.5 cups Pasta cooking water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and drain the rest.

Step 2

While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat until the butter melts.

Step 3

Add the chopped prosciutto to the skillet and cook for 2-3 minutes, stirring occasionally, until slightly crisp.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to burn it.

Stir in the halved cherry tomatoes, crushed red pepper flakes, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Remove the skillet from the heat and fold in half of the chopped basil and Parmesan cheese, tossing to combine.

Divide the pasta among serving plates and garnish with the remaining basil and additional Parmesan cheese, if desired.
