Ingredients

  • 1 loaf Ciabatta bread
  • 8 slices Prosciutto
  • 1 cup Roasted red peppers
  • 8 ounces Fresh mozzarella cheese
  • 8 leaves Fresh basil leaves
  • 2 tablespoons Olive oil
  • 2 teaspoons Balsamic glaze
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Slice the ciabatta loaf into four equal sections, then slice each section horizontally to create sandwich halves.

Step 2

Brush the cut sides of each piece of bread lightly with olive oil.

Step 3

On the bottom half of each sandwich, layer 2 slices of prosciutto, a quarter of the roasted red peppers, 2 ounces of fresh mozzarella slices, and 2 basil leaves.

Step 4

Drizzle 1/2 teaspoon of balsamic glaze over the filling of each sandwich and season lightly with salt and black pepper.

Step 5

Place the top half of the bread on each sandwich to assemble.

Step 6

Preheat a panini press or grill pan over medium heat. If using a grill pan, weigh down the sandwiches with another heavy pan or a foil-wrapped brick during cooking.

Step 7

Cook each panini for about 2-3 minutes per side, or until the bread is golden and crispy and the mozzarella is melted.

Step 8

Remove from the heat and let rest for 1 minute before slicing each panini in half. Serve warm.
