Ingredients

  • 12 oz Pasta (fettuccine or spaghetti)
  • 4 oz Prosciutto
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat olive oil in a large skillet over medium heat.

Step 3

Add the prosciutto to the skillet and cook for 2-3 minutes until crispy. Remove the prosciutto with a slotted spoon and set aside on a plate lined with paper towels.

Step 4

In the same skillet, reduce the heat to medium-low and add the minced garlic. Cook for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 5

Slowly pour in the heavy cream, stirring to combine. Simmer gently for 3-4 minutes until the sauce slightly thickens.

Step 6

Stir in the grated Parmesan cheese, salt, and black pepper. If the sauce is too thick, add small amounts of the reserved pasta water until it reaches the desired consistency.

Step 7

Add the cooked pasta to the skillet and toss to coat evenly with the sauce.

Step 8

Crumble the crispy prosciutto over the pasta and gently toss to combine.

Step 9

Serve immediately, garnished with chopped parsley if desired.
