  • 2 pounds butternut squash
  • 2 tablespoons olive oil
  • 1 medium yellow onion

  • 4 cups chicken or vegetable broth

  • 4 slices prosciutto
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon fresh thyme (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side up on a baking sheet, drizzle with 1 tablespoon of olive oil, and season lightly with salt and pepper.
