Ingredients

  • 120 ml Water
  • 60 g Unsalted butter
  • 75 g All-purpose flour
  • 0.25 tsp Salt
  • 2 large Eggs
  • 50 g Parmigiano-Reggiano cheese, finely grated
  • 50 g Prosciutto, finely chopped
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the water, butter, and salt over medium heat. Heat until the butter is fully melted and the mixture begins to boil.

Step 3

Remove the saucepan from heat and immediately add the flour in one go. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Step 4

Return the pan to low heat and cook the dough for 1-2 minutes, stirring constantly, to remove excess moisture.

Step 5

Transfer the dough to a mixing bowl and let it cool for about 5 minutes.

Step 6

Add the eggs one at a time, beating well after each addition. The dough should be smooth, shiny, and slightly sticky.

Step 7

Fold in the grated Parmigiano-Reggiano, chopped prosciutto, and black pepper until evenly distributed.

Step 8

Spoon or pipe small mounds of dough (about a tablespoon each) onto the prepared baking sheet, spacing them approximately 2 inches apart.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crisp on the outside.

Step 10

Remove the puffs from the oven and let them cool slightly before serving. Serve warm or at room temperature.
