Heat a small non-stick pan over medium heat and add the olive oil.
Crack the egg into a bowl, add salt and black pepper, and whisk until combined.
Pour the egg into the pan and cook it as a thin omelette for about 2 minutes, flipping halfway. Set aside.
Preheat a panini press or heat a grill pan over medium heat.
